The Meat at Billy’s Story
I opened Meat at Billy’s here in Ashgrove, Brisbane in 2009. This site has been a working butcher shop dating back to the ‘70s. Back then it was one of four butcher shops in the block. How times have changed!
We’re one of the few independent Brisbane butchers left who specialise in modern butchering as well as keeping traditional butchery alive. As a result, we get many dedicated home cooks from all over Brisbane, searching us out to track down those lesser-known cuts of meat. All of my butchers love to cook and more importantly, love to EAT!
We take pride in the quality of our meat and offer what we consider to be some of the best steaks in town! We’re well known for our sausages too. They’re all made here on site, over twenty different flavours, all gluten free and made from fresh ingredients.
In the last few years, we’ve noticed increasing demand for high quality, free-range local meat and our product lines have expanded accordingly. We now stock grain and grass-fed beef, QLD Gooralie free-range pork products, free-range chickens and free-range ducks.
I employ several chefs to create our hugely popular ‘ready to cook’ lines – ideal for busy people. Try our marinated butterflied legs of lamb. They’re great on the Weber! We also offer stuffed pork belly roasts, the tastiest burger patties in town, creamy chicken & pumpkin parcels, hickory glazed pork spare ribs.
Meat at Billy’s is more than just a Brisbane butcher shop. We also have a great deli section where you can find anything from marinades, sauces and vinegars to couscous, preserved lemons, chipotle peppers, Maleny cream and Australian cultured butter.
