
Our warm herbed creme fraiche potato salad is a delicious twist on the traditional potato salad. The tangy dressing pairs perfectly with BBQ steaks or your weekend roast. Even without the dressing, the potatoes tossed in paprika is a great way to spice up your regular roast potatoes.
Warm herbed creme fraiche potato salad
Serves: 6 people | Prep Time: 20-25 mins | Cook Time: 50 min – 1 hour
Ingredients:
1 kg potatoes, cut into 3cm chunks
2 tbsp olive oil
1 tsp smoked paprika
1 tsp sweet paprika
¼ cup parsley, finely chopped
¼ cup dill, finely chopped
5 sprigs of thyme, leaves only, finely chopped
Juice of 1 lemon
200ml crème fraiche
Salt and pepper
Method:
Preheat the oven to 200°C fan forced.
In a medium bowl, toss together the potatoes, olive oil and sweet and smoked paprika and place the potatoes into a roasting tray.
Place the roasting tray into the hot oven and roast for 50mins – 1hr or until the potatoes are golden and crispy.
Meanwhile, combine the parsley, dill, thyme, lemon juice, crème fraiche and season with salt and pepper to taste. Set aside.
Remove the potatoes from the oven and toss the warm potatoes in a large bowl with the crème fraiche dressing.
Serve immediately with your favourite BBQ meat or weekend roast.
