TOMATO & MINT SALSA
Serves: 4-6 | Prep time: 10 mins
Our quick and easy tomato & mint salsa adds the hit of freshness that lamb roasts need. It has just the right balance of salt and acidity to offset the richness of the roasted or barbecued lamb.

1 punnet cherry tomatoes (quartered)
¼ cup mint (roughly chopped)
¼ cup continental parsley (roughly chopped)
¼ cup capers (drained)
1 tbsp olive oil
1 tbsp red wine vinegar
1 large french onion shallot (finely diced)
salt and pepper
Add all the salsa ingredients to a small bow and gently stir to combine. Season to taste.
It’s best assembled just before serving so the herbs don’t soften too much from the vinegar and salt.
