One Pan Italian Meatballs
with Roasted Sweet Potato Wedges
Serves: 4 people | Prep Time: 10-15 mins | Cook Time: 50-55 mins
INGREDIENTS:
1kg Italian pork meatballs
1kg sweet potato, unpeeled and cut into wedges
300g (2 large) red onions, cut into wedges
1 tsp dried Italian herbs mix
2 tbsp extra virgin olive oil
salt and pepper to season
250g truss tomatoes
fresh basil to serve
METHOD:
Preheat the oven to 180°C fan forced.
Into a baking tray add the sweet potato, onions and dried Italian herbs and toss with the olive oil. Roast the sweet potato and onions for 30 minutes. Remove from the oven and place the meatballs and the truss tomatoes on top of the sweet potato and onions and continue to roast for a further 15-20 minutes or until the vegetables and meatballs are cooked through.
To serve, scatter over the fresh basil leaves and season with any extra salt and pepper.
