
MUSTARD BRAISED RED CABBAGE
Serves: 4-6 | Prep time: 10 mins | Cook time: 30 mins
This mustard braised red cabbage recipe is almost like a warm pickle, it has a good amount of vinegar, a little sugar and a nice dollop of mustard.
Give it a go if you’ve never tried braised cabbage. As a side, it also goes very well with steak and sausages.

INGREDIENTS
1 small red cabbage, or ½ large one, about 800g, finely shredded
1 tbsp olive oil
6 sprigs thyme
2 tbsp seeded mustard
¼ cup light brown sugar
200ml red wine vinegar
50g butter
Salt
Cracked pepper

METHOD
Place all the ingredients into a large pot along with a good seasoning of salt and pepper. Bring to a simmer, then cover with a lid, lower the temperature to low and cook for 20-25 mins or until the cabbage is tender, but still has a firmness to it. Remove the lid and continue to cook for a further 5-10 mins, retaining a slight firmness to the cabbage.
Serve alongside barbecued pork or beef or your favourite sausages.
