Chicken Kebabs are more than just meat on a stick. With the addition of your a few of your favourite vegetables and a scattering of garnish, you’ll have a flavoursome dinner on the table in a flash.

INGREDIENTS:
Meat at Billy’s Chicken Kebabs – choose your favourite flavour or a few of each (plain, satay, lemongrass & coconut or honey & soy)
3 varieties of your favourite vegetables (we chose broccoli, cauliflower & cabbage), roughly sliced thick
Garnishes of your choice (we chose coriander, shallots & chilli)
Sesame seeds (optional)
1 lemon, zest & to squeeze at end
Extra virgin olive oil
Salt & pepper
METHOD:
Preheat the oven to 180°C fan forced.
Roughly slice your vegetables (thick), Line a roasting pan with the vegetables and drizzle with extra virgin olive oil and season with salt and pepper.
Cook for 5 minutes at 180°C.
After 5 minutes, place the kebabs on top of the vegetables and cook for a further 15-20 minutes at 180°C, or until kebabs are cooked.
Whilst kebabs are cooking, chop your garnishes (fresh chilli, shallots, coriander … or whatever you prefer).
When the kebabs are done, scatter over the garnishes and some lemon zest. Give a good squeeze of lemon juice and serve!
