WITH CHILLI LIME SALTED BUTTER & MANCHEGO CHEESE
Corn chargrilled on the BBQ is always a winner. The combination of sweet corn and the smokiness from the BBQ is hard to beat. We’ve upped the flavour by brushing the corn with a tangy lime and chilli butter then finished it with a generous scatter of grated manchego cheese.
This recipe is sure to be a winner at your next BBQ.

Serves: 6 | Prep time: 10-15 mins | Cook time: 8-10 mins
6 corn on the cob
200g butter, softened
1 tbsp chilli flakes
2 tsp sea salt flakes
Juice of 1 lime
100g Manchego cheese
Coriander leaves to serve
Turn your BBQ onto a high heat.
Mix together the butter, chilli flakes, sea salt and lime. Using a pastry brush, brush half the butter mixture over the corn and then place the corn onto the hot BBQ. Chargrill the corn, then remove from the heat.
To serve, place the corn onto a serving platter and brush with the remaining butter mixture. Grate over the Manchego cheese and squeeze over the lime and scatter with coriander. Serve straight away.
