Quick Salsa Verde


Serves: 4-6  | Prep time: 5-10 mins

Salsa Verde is a versatile sauce that adds instant flavour to almost any dish. 

The tangy, herb flavour cuts through the richness of many meats, especially steaks, lamb and beef roasts. Drizzle it over your bacon and eggs, roast veges or seafood. 

Authentic salsa verde is usually chopped up by hand, but it still tastes great made in a food processor… plus you will have saved a lot of time.

½ cup fresh parsley leaves
½ cup fresh dill
½ cup fresh basil leaves
1 small deseeded cucumber
1 large garlic cloves
3 tbsp capers
Juice of ½ lemon
2 tbsp red wine vinegar
1tsp sea salt flakes
½ tsp cracked black pepper
¼ cup extra virgin olive oil

Quick Salsa Verde

Place all ingredients into a food processor and process until chopped and combined. Don’t over process it, you want to retain some of the chunkiness.

Adjust seasoning as needed and add extra olive oil if the mixture is too thick.
