PORK FILLET SUB
WITH ORANGE MUSTARD SAUCE

Our pork fillet subs are an easy midweek dinner that’s ready in 30 mins. In this recipe, Alana has put together a simple, but very tasty, orange mustard sauce to serve with the pork sub. The flavour works so well with the pork and feta.
To complete the meal, serve the pork with a simple salad or roast some vegetables along side the pork.

INGREDIENTS
1 Pork Fillet Sub
5 sprigs of thyme
2 tbsp Dijon or Australian mustard
2 tbsp white wine vinegar
2 tbsp orange juice
3-4 tbsp extra virgin olive oil
Salt and cracked pepper
1 tbsp orange zest
METHOD
Preheat the oven to 180°C fan forced.
Place the pork fillet sub onto a roasting tray, drizzle with extra virgin olive oil, sprinkle with thyme leaves and salt. Place into hot oven and roast for 25 minutes. Remove and rest for 5-10 minutes before slicing.
Meanwhile, to make the orange mustard sauce, place the mustard, vinegar, orange juice, olive oil into a jar and shake until well combined. Season with salt and pepper.
To serve, place the sliced pork fillet onto a plate and scatter over orange zest and any remaining fresh thyme. Drizzle with the mustard sauce.
