SHIMO WAGYU

Shimo is derived from Shimofuri, the Japanese word used to describe fine marbling of beef. Shimo, when combined with the traditional Japanese symbol, translates to frost or snow crystal. Together these embody the speckling of the marbling in our beef, like the fine delicate nature of a snowflake.

We breed cattle to produce softer, healthier marbling, that is not only juicy and tender, but most importantly flavoursome!

Our entire cattle breeding program was designed to produce beef with the highest standards for meat quality and safety. At all stages of the production chain, cattle are managed in accordance with strict quality assurance protocols developed by the company.

Dry Ageing

Meat at Billy’s offers our own in-house dry age beef.

Why Dry Age? Dry aging is the process of slowly aging the meat via both temperature and humidity control. By creating a ‘crust’ on the outside of the meat, the enzymes within naturally cause the muscle fibres to break down.

The result, tenderness and a remarkable depth of flavour!
