SHIMO WAGYU BRISKET  – 100% Full Blood Wagyu

Depending on current supply, these briskets will range anywhere from 7+ to 9+ marble score.

Think you’ve had good brisket? You need to try these. The taste ranks as one of the best we’ve ever had.
What’s more, the ample marbling make them more forgiving when smoking making it easy for even a low & slow novice to achieve a superb brisket every time.

Highly marbled Wagyu brisket is considered superior to regular supermarket-bought or cheaper brisket for several reasons:

1. Flavour: The high level of marbling (intramuscular fat) in Wagyu brisket boosts its flavour, giving it a rich, buttery taste that’s more intense than standard brisket.
2. Tenderness: The fat within the muscle fibres helps keep the meat tender and juicy during cooking, resulting in a soft, lush texture that’s often more enjoyable than the tougher texture of regular brisket.
3. Quality and Consistency: Wagyu beef is typically sourced from cattle that are raised under strict quality control measures, ensuring a consistently high-quality product. Regular supermarket brisket can vary significantly in quality, leading to inconsistent cooking results.
4. Culinary Experience: Due to its superior flavour, tenderness, and quality, Wagyu brisket provides a more luxurious and satisfying culinary experience, making it a preferred choice for serious BBQ, special occasions and gourmet cooking.

Overall, the superior marbling, flavour, tenderness, and quality of Wagyu brisket make it a more desirable option compared to regular supermarket brisket.
