Duck breast marinated in a Peking style glaze. With a hint of five spice, our Peking duck breast is sweet and rich in flavour.
Preheat the oven to 180°C. Using an oven proof pan, place Peking duck breast in the COLD pan, skin side down. Turn the heat up to low-medium. Once the skin has darkened (watch closely as this will happen quickly), turn the breast over then place in the preheated oven for 10-15 minutes, until the breast is cooked to your liking and the fat has rendered down.
1. Peking Duck Pancakes – slice cooked breast and serve on duck pancakes with hoisin sauce, finely sliced cucumber batons and shallots.
2. Duck Rice Paper Rolls – make rolls with rice vermicelli, finely sliced Peking duck, cucumber, mint, chopped roasted cashews and spring onions. Serve with your favourite Asian style dipping sauce.
3. Peking Duck breast – slice the breast and serve on steamed jasmine rice with charred Asian greens.
