Osso buco, responds incredibly to slow cooking. Due it’s gelatinous properties, braising in liquid at low temperatures for long periods of time bring out its best qualities turning it into soft, sweet succulent pieces of meat and rich, decadent marrow.
Meat at Billy’s grass fed osso comes from the hind shank meaning the pieces are bigger with more meat. Our preferred supplier for this cut is local Queensland producer, Rangeland Quality Meat.
Like with many of our products, the trimming specifications we adhere to sets our osso buco apart from other retailers. We completely remove the layer of fat from the outside so it’s literally all gelatinous shin meat with no large chunks of fat attached. We also square off the very ends where the bone section becomes thicker, so each piece has an even piece of bone, top and bottom.
