A field blend of Chardonnay (40%), Riesling (23%), Sauvy B (23%) and Pinot Noir (14%).
A lively palate of texture and spice. Vibrant acidity provides the liveliness and freshness Tasmania is renowned for.
We like to think of its colour as ‘Devil Red’. And we like to think of its aromatics as wild berries. And it’s light on the fizz so you can slam it down f…slowly.

WHAT IS A PET NAT?
Pet Nat, short for “Pétillant Naturel,” is a type of wine that’s like a charming throwback to those earlier winemaking days.
It’s often described as the “original sparkling wine” because it’s made using an ancient method that predates the more well-known Champagne method.
It’s a bit like capturing a moment of the grape’s natural fermentation in a bottle. Here’s how it works:
- Natural Fermentation: Winemakers start by picking grapes and crushing them to extract the juice. This juice is then left to ferment naturally, meaning without the addition of any extra yeast or sugar. Wild yeasts that naturally exist on the grape skins and in the environment kickstart the fermentation process.
- Bottling Before Fermentation Completes: Here’s where the magic happens. The wine is bottled while it’s still actively fermenting. This is quite different from traditional sparkling wine methods, where fermentation usually completes before bottling. In the case of Pet Nat, the winemaker lets the fermentation continue inside the bottle, creating carbon dioxide gas as a byproduct. This gas gets trapped in the bottle, creating natural bubbles.
- Limited Intervention: Pet Nat wines are known for their minimal intervention. Unlike some other wines, they’re often not filtered or fined heavily, which can allow them to retain more of their natural, vibrant flavors and textures.
- Varied Flavors: Because the process is somewhat unpredictable due to the ongoing fermentation, Pet Nat wines can showcase a wide range of flavors and textures. They might be a little cloudy or hazy, which is normal due to the lack of filtration.
- Light and Refreshing: The resulting wine is usually light, refreshing, and slightly fizzy. It’s not as intensely bubbly as Champagne, but it has a playful effervescence that adds a lively character.
In a way, drinking Pet Nat is like sipping a taste of history mixed with a touch of modern adventure. It’s a celebration of the natural processes of winemaking, embracing the imperfections and unique qualities that can arise.
