WITH MUSTARD BRAISED RED CABBAGE

Grilled pork medallions are always a winner. They’re tasty, lean, economical and quick to cook. Pork works so well with many sweet and savoury flavours.

Alana has paired the pork medallions with a lovely autumnal braised cabbage. This braised cabbage recipe is almost like a warm pickle, it has a good amount of vinegar, a little sugar and a nice dollop of mustard. Give it a go if you’ve never tried braised cabbage. As a side, it also goes very well with steak and sausages.

INGREDIENTS
4 pork medallions
Salt & cracked pepper
1 tbsp olive oil
1 large pink lady apple, cut into thin sticks
Juice of 1 lemon 

Mustardy Thyme Braised Cabbage
1 small red cabbage, or ½ large one, about 800g, finely shredded
1 tbsp olive oil
6 sprigs thyme
2 tbsp seeded mustard
¼ cup light brown sugar
200ml red wine vinegar
50g butter
Salt & cracked pepper

Grilled Pork Medallions with Mustard Braised Red Cabbage

METHOD
To make the braised cabbage, place all the ingredients into a large pot along with a good seasoning of salt and pepper. Bring to a simmer, then cover with a lid, lower the temperature to low and cook for 20-25 mins or until the cabbage is tender, but still has a firmness to it.  Remove the lid and continue to cook for a further 5-10 mins, retaining a slight firmness to the cabbage.

Meanwhile, preheat the BBQ grill to a medium-high heat. Season the pork medallions with good amount of cracked pepper and salt and olive oil. Place onto the hot BBQ grill and cook until you see the grill scorch marks, approximately 2-3 minutes. Turnover and cook the other side for a further 2-3 mins for a medium cook. Set aside to rest for approx 3-4 mins.

To serves, toss the apple sticks in the lemon juice. Slice the pork medallions. Spoon the braised cabbage onto a plate and serve with sliced pork, lemony apple sticks and sprinkle over fresh thyme if desired.
