Buffalo Tenders Mini Tacos
with jalapeño & coriander mayo
These Buffalo Tenders Mini Tacos utilise the already prepared Meat at Billy’s Buffalo Tenders (chicken tenders in a panko buffalo crumb) as the main ingredient.
Our Buffalo Tenders are made in-house with free range chicken.
These mini tacos are the perfect snack accompanied with the ‘bite’ of the jalapeño & coriander mayo.
Makes: approx 12 mini tacos || Time: Prep – 20min, cook – 10-15min
1kg Meat at Billy’s Buffalo Tenders* (approximately 12-14 tenders)
1 cup whole egg mayonnaise
1 cup natural Greek yoghurt
fresh coriander, roughly chopped (to taste)
pickled jalapeño, chopped (to taste)
12 mini tacos
pre-prepared slaw mix (finely sliced red & white cabbage, carrot and shallot)
salt and pepper to taste

- 1. For the jalapeño & coriander mayo, mix together the mayonnaise and Greek yoghurt. Add finely chopped pickled jalapeños and coriander to taste. (Go a little harder on the pickled jalapeños if you like a bit more of a kick.) Season with salt and pepper. Refrigerate.
- 2. Preheat oven to 200°C. Line a baking tray with baking paper.
- 3. Bake for 10 minutes on each side, or until cooked through. (Alternatively, you can shallow fry until golden.)
- 4. Serve mini taco with a little slaw. Top with a buffalo tender and dollop of jalapeño & coriander mayo. Finish with a squeeze of lime and extra sprinkle of coriander.
