These single serve Pumpkin & Fetta Chicken Roasters are made in house from a chicken breast on the bone, stuffed with roast pumpkin, fetta and lightly seasoned with lemon & garlic.
Brush or spray with oil and bake in a preheated oven at 180 degrees for 35-40 mins or until cooked and golden brown. For a little extra taste, add chopped capsicum, broccoli and onion to the roasting pan.
Serve with grains (such as quinoa) or salad.
