Brush or spray with oil and bake in a preheated 180°c oven for 30/35 mins or until golden brown. The internal temperature of the chicken should be 75ºc when tested with a digital thermometer.
Add some sweet potato and seasonal vegetables to the baking tray when cooking the chicken. Serve the chicken and vegetables with some extra parmesan grated over the top and a squeeze of lemon.
The chicken is also great served with a summery tomato and pesto salad.
