Filet Mignon (min 250g)
Our take on the fabulous filet mignon … a tender grass fed eye fillet, marinated in a red wine and caramelised onion reduction, wrapped in double smoked Billy’s bacon and topped with a sage & garlic butter medallion.
Preheat your oven & oven tray to 180°C. Remove the butter & reserve for later. Place the filet mignon on the preheated tray for 20 minutes (for medium rare – 55°C if using a digital thermometer). Remove from the oven, place butter back on top and allow to rest for 5 minutes before serving.
Serve with potato gratin & Saute steamed carrots in butter, honey & fennel seeds.
