EASY SUMMERY SIDES

beet saladOn these hot nights, steak and salad appear frequently on our dinner table during the week. It’s great cooking outside on the BBQ. It’s so much cooler and there’s much less washing up!

The steak part is easy but sometimes it’s hard coming up with new ideas for super easy & delicious sides. Here are a few that feature regularly at our place.

 

BEETROOT, FETTA & DILL SALAD

Ingredients:
tinned baby beets
*goat fetta
shallots
baby cos
fresh dill
EVOO
red wine vinegar
s&p

Chop, beets into quarters and rinse. Shred baby cos and dress with EVOO, vinegar, salt & pepper. Place cos down first and then place beets on top followed by crumbled fetta, chopped shallots and fresh dill.

CHAR GRILLED ASPARAGUS & BROCCOLINI

If you’ve never barbecued asparagus & broccolini before, trust me, you need to try it.

Ingredients:
bunch of asparagus
bunch of broccolini
EVOO
lemon juice
s&p

Heat BBQ grill to a medium heat. Snap off the woody ends of the asparagus & trim the ends of the broccolini. Toss in EVOO and S&P. Place on the hot BBQ grill and cook for 2 mins each side. Remove and place in a bowl. Drizzle with extra EVOO & lemon juice and toss.

 

ASIAN COLESLAW

Ingredients:
red cabbage
white cabbage
carrot
green apple
shallots
fresh coriander
Japanese mayo
rice vinegar
s&p

Finely chop cabbage, carrot, green apple & shallots. Dress with rice vinegar first, you don’t need much and can add more later. This helps apple from turning brown too. Stir through Jap mayo and s&p to taste. Sprinkle coriander on top.
